Ingredients

  • 1 pre-baked pie crust
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 egg yolks, lightly beaten
  • 1 tablespoon lemon zest
  • 1/3 cup freshly squeezed lemon juice
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the water until smooth.

  2. Cook over medium heat, stirring constantly, until the mixture boils and thickens.

  3. Remove from heat. Gradually whisk about half of the hot mixture into the beaten egg yolks. Then, pour the egg yolk mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.

  4. Remove from heat and stir in the lemon zest, lemon juice, butter, and vanilla extract until well combined. Let the mixture cool slightly.

  5. Pour the lemon filling into the pre-baked pie crust.

  6. Preheat the oven to 350°F (175°C).

  7. In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until foamy. Gradually add in the sugar and continue beating on high speed until stiff peaks form.

  8. Spread the meringue over the lemon filling, making sure to seal the edges.

  9. Bake for 12-15 minutes, or until the meringue is golden brown.

  10. Allow the pie to cool completely before serving.
