Ingredients

  • 2 cups of chopped okra
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 tomatoes, diced
  • 2 cups of vegetable broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat oil in a large pot over medium heat.

  2. Add onions and garlic and sauté for 2-3 minutes until softened.

  3. Add chopped okra and cook for another 5 minutes.

  4. Add diced tomatoes and cook for 5 minutes.

  5. Add vegetable broth, thyme, salt, and black pepper and bring to a boil.

  6. Reduce heat to low and let simmer for 30 minutes.

  7. Serve hot with a side of rice or bread.
