  • 1 pound okra, sliced into 1/2-inch pieces
  • 2 eggs, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the beaten eggs in a shallow bowl.

  3. In another bowl, combine the breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper.

  4. Dip each piece of okra into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.

  5. Place the coated okra on a baking sheet lined with parchment paper.

  6. Bake in the preheated oven for 20-25 minutes, or until the okra is golden and crispy.
