African Pumpkin Soup Recipe

How To Make African Pumpkin Soup

A warm and comforting soup made with pumpkin, spices, and coconut milk.

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1 can coconut milk
  • 3 cups vegetable broth
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large pot, heat olive oil over medium-high heat.

  2. Add onion, garlic, and ginger and cook until fragrant for about 3 minutes.

  3. Add the spices and cook for another minute.

  4. Add the pumpkin and cook for 5-7 minutes.

  5. Pour in the coconut milk and vegetable broth.

  6. Bring to a boil, reduce heat and simmer for 25 minutes or until the pumpkin is soft.

  7. Remove from heat and allow to cool for a few minutes.

  8. Using a blender, puree the soup until smooth.

  9. Serve hot with a sprinkle of salt and pepper.
