Ingredients

  • 2 ripe plantains, peeled and mashed
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 2 eggs, beaten
  • 1/4 cup milk
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together the mashed plantains, flour, cornmeal, sugar, salt, baking powder, nutmeg, and cinnamon.

  2. Add the beaten eggs and milk to the mixture and stir until well combined.

  3. Heat about 1 inch of vegetable oil in a deep frying pan over medium heat.

  4. Using a small cookie scoop or spoon, drop spoonfuls of the batter into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side.

  5. Remove the fritters from the oil with a slotted spoon and drain on a paper towel-lined plate.

  6. Serve warm as an appetizer or snack.
