African Vegetable Curry Recipe

How To Make African Vegetable Curry

A spicy and flavorful curry packed with nutritious vegetables and aromatic spices.

Serves:

Ingredients

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 2 carrots, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 cup chopped cabbage
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat oil in a large pot or Dutch oven over medium heat.

  2. Add onion and garlic and cook until softened.

  3. Add spices and stir for a minute until fragrant.

  4. Add chopped vegetables, chickpeas, tomatoes, and vegetable broth.

  5. Bring to a boil, then reduce heat and simmer for 30 minutes until vegetables are tender.

  6. Season with salt and pepper to taste.

  7. Garnish with chopped cilantro before serving.
