How To Make African Okra and Egusi Soup Recipe

A hearty soup with a thick texture made with okra and egusi (melon seeds).

Serves:

Ingredients

  • 2 cups of chopped okra
  • 1 cup of egusi (melon seeds)
  • 2 tbsp of palm oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 2 cups of vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. In a pan, heat the palm oil and add the onion and garlic. Cook until translucent.

  2. Add the chopped tomatoes and cook until they are soft.

  3. Add the egusi (melon seeds) and cook, stirring constantly, for 5 minutes.

  4. Add the broth and chopped okra. Stir well and bring to a boil.

  5. Lower heat, cover, and simmer for 20 minutes.

  6. Season with salt and pepper to taste.
