How To Make African Pumpkin Soup
A warm and comforting soup made with pumpkin, spices, and coconut milk.
Serves:
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1 can coconut milk
- 3 cups vegetable broth
- Salt and pepper to taste
- Olive oil for frying
Instructions

In a large pot, heat olive oil over medium-high heat.

Add onion, garlic, and ginger and cook until fragrant for about 3 minutes.

Add the spices and cook for another minute.

Add the pumpkin and cook for 5-7 minutes.

Pour in the coconut milk and vegetable broth.

Bring to a boil, reduce heat and simmer for 25 minutes or until the pumpkin is soft.

Remove from heat and allow to cool for a few minutes.

Using a blender, puree the soup until smooth.

Serve hot with a sprinkle of salt and pepper.
