Serves:
Ingredients
- 4 salmon fillets (6 oz. each)
- 1/2 cup bourbon
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
-
Preheat oven to 375°F and line a baking sheet with aluminum foil.
-
In a small saucepan, combine bourbon, brown sugar, soy sauce, honey, and Dijon mustard. Bring to a boil over high heat, then reduce heat and let simmer until glaze is thickened and reduced by half, about 10 minutes.
-
Season salmon fillets with salt and pepper on both sides.
-
Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 2-3 minutes per side until browned.
-
Brush salmon fillets generously with bourbon glaze and transfer to prepared baking sheet. Bake in preheated oven for 10-12 minutes until salmon is cooked through and glazed is bubbly and caramelized.
-
Serve hot with mashed sweet potatoes and grilled asparagus.
