Ingredients

  • 4 flounder fillets
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb lump crab meat
  • 1 cup breadcrumbs
  • 1/2 cup butter, melted
  • 1/4 cup parsley, chopped
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Spray baking dish with oil.

  3. In a large bowl, combine shrimp, crab meat, breadcrumbs, melted butter, parsley, and seasonings.

  4. Lay fillets flat and divide stuffing mixture between each one.

  5. Roll up each fillet and secure with toothpicks.

  6. Arrange lemon slices on top of fillets.

  7. Bake in preheated oven for 30-35 minutes, until fish is cooked through and stuffing is golden brown.
