How To Make Mediterranean Chicken Sandwich

Ingredients

  • 4 chicken breasts
  • 4 ciabatta rolls
  • 1 cup of hummus
  • 1/2 cup of crumbled feta cheese
  • 1 cucumber, sliced
  • 1 red onion, sliced
  • 1 tomato, sliced
  • 1/4 cup of chopped fresh parsley
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush the chicken with olive oil and season with salt and pepper.

  3. Grill the chicken for 5-6 minutes per side or until cooked through.

  4. Slice the ciabatta rolls and toast them on the grill.

  5. Spread the hummus evenly on the rolls.

  6. Top the hummus with the grilled chicken, cucumber slices, red onions, tomatoes, and feta cheese.

  7. Sprinkle with chopped parsley.
