Ingredients

  • 1 lb scallops
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch mixed with 1/4 cup of water
  • Salt and pepper to taste

Instructions

  1. Heat a wok or large skillet over high heat.

  2. Add the vegetable oil and swirl to coat the pan.

  3. Add the bell peppers and onions to the pan and stir-fry for 2-3 minutes or until slightly softened.

  4. Add the garlic and ginger to the pan and stir-fry for an additional 30 seconds.

  5. Add the scallops to the pan and cook for 3-4 minutes or until just cooked through.

  6. In a small bowl, whisk together the soy sauce, oyster sauce, and cornstarch mixture until smooth.

  7. Pour the sauce over the scallop stir-fry and toss to coat evenly.

  8. Season to taste with salt and pepper.

  9. Serve immediately, garnished with chopped cilantro if desired.
