Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a mixing bowl, combine the breadcrumbs, Parmesan cheese, basil, sun-dried tomatoes, garlic, olive oil, salt, and pepper.

  3. Slice a pocket into each chicken breast, being careful not to cut all the way through.

  4. Stuff each chicken breast with the breadcrumb mixture, pressing it in gently to secure.

  5. Heat a large skillet over medium-high heat and add a drizzle of olive oil.

  6. Cook the stuffed chicken breasts in the skillet for 3-4 minutes on each side, until golden brown.

  7. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes, or until cooked through and no longer pink in the center.

  8. Serve the Italian stuffed chicken hot, with your favorite side dishes.
