How To Make Boondi Laddu

Boondi Laddu is a popular Indian sweet made from boondi balls, soaked in sugar syrup and garnished with nuts.

Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes

Serves:

Ingredients

  • 1 cup besan (gram flour)
  • 1/4 cup water
  • 1/4 tsp baking soda
  • Ghee or oil for frying
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp cardamom powder
  • A pinch of saffron strands
  • Chopped nuts for garnish (almonds, pistachios, cashews)

Instructions

  1. In a mixing bowl, combine besan, water, and baking soda to make a smooth batter.

  2. Heat ghee or oil in a deep frying pan. Drop small amounts of the batter into the hot oil using a perforated spoon to make boondis.

  3. Fry the boondis until they turn golden brown. Remove from the oil and drain on a paper towel.

  4. In a separate pan, heat 1/2 cup water and add sugar. Stir until the sugar dissolves and the mixture reaches a one-string consistency.

  5. Add cardamom powder and saffron strands to the sugar syrup.

  6. Add the fried boondis to the sugar syrup and mix well until the boondis are evenly coated.

  7. Allow the mixture to cool slightly. Take small portions of the mixture and shape them into laddus using your hands.

  8. Garnish the laddus with chopped nuts.

  9. Let the laddus cool completely before serving.
