Ingredients

  • 500g prawns, peeled and deveined
  • 1 large aubergine, cut into cubes
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala
  • 2 tomatoes, pureed
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pan and add cumin seeds.

  2. Once they start spluttering, add onions, garlic, and ginger. Saute until onions turn golden brown.

  3. Add the tomato puree and cook for a few minutes until the oil separates.

  4. Add coriander powder, turmeric powder, chili powder, and salt. Mix well.

  5. Add the aubergine cubes and cook until they are slightly tender.

  6. Add the prawns, cover the pan, and let it cook for about 5-7 minutes or until the prawns are cooked through.

  7. Sprinkle garam masala and garnish with fresh coriander leaves.

  8. Serve hot with rice or naan bread.
