How To Make Caprese Stuffed Chicken Breast Recipe

Juicy chicken breasts filled with gooey mozzarella, fresh cherry tomatoes and fragrant basil, baked until golden brown.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, shredded
  • ½ cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Cut a deep slit into the side of each chicken breast to form a pocket, making sure not to cut all the way through.

  3. In a small mixing bowl, combine cherry tomatoes, mozzarella, basil, garlic, salt, and pepper.

  4. Stuff each chicken breast pocket with the caprese mix and secure with toothpicks.

  5. Heat olive oil in a large oven-safe skillet over medium-high heat.

  6. Add the stuffed chicken breasts to the skillet and cook for 4-5 minutes per side until golden brown.

  7. Transfer skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked and the cheese is melted and bubbly.

  8. Remove toothpicks from chicken and serve hot.
