Ingredients

  • 500g cold roast beef, thinly sliced
  • 4 medium-sized beetroots, cooked and peeled
  • 2 cups mixed salad greens
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/2 cup sour cream
  • 2 tbsp horseradish sauce
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the sour cream, horseradish sauce, lemon juice, salt, and pepper. Mix well to make the horseradish cream.

  2. Slice the cooked beetroots into rounds or wedges, depending on your preference.

  3. In a separate bowl, toss the mixed salad greens, parsley, and chives together.

  4. Arrange the sliced cold roast beef, beetroot slices, and salad greens on a serving platter.

  5. Drizzle the horseradish cream over the beef and beetroot salad.

  6. Serve chilled and enjoy!
