How To Make Smoked Mackerel & Beetroot Salad with Creamy Horseradish Dressing

- 200g smoked mackerel fillets, flaked
- 2 medium-sized beetroots, cooked and sliced
- 4 cups mixed salad greens
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- creamy horseradish dressing:
- 1/2 cup Greek yogurt
- 2 tbsp horseradish sauce
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions

In a small bowl, mix together the Greek yogurt, horseradish sauce, lemon juice, salt, and pepper to make the creamy horseradish dressing. Set aside.

In a large salad bowl, arrange the mixed salad greens.

Top the greens with the flaked smoked mackerel, sliced beetroots, red onion, and fresh dill.

Drizzle the creamy horseradish dressing over the salad.
