Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp lemon zest
  • 1/2 cup milk
  • 1/4 cup freshly squeezed lemon juice
  • For the Clotted Cream Frosting:
  • 1 cup heavy cream
  • 1/2 cup clotted cream
  • 1/4 cup powdered sugar
  • 1 tsp lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the lemon zest.

  5. Gradually add the flour mixture to the butter mixture, alternating with the milk and lemon juice. Begin and end with the flour mixture.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  8. While the cake is baking, prepare the clotted cream frosting. In a chilled bowl, whip the heavy cream until stiff peaks form.

  9. Gently fold in the clotted cream, powdered sugar, and lemon zest until well combined.

  10. Once the cake has cooled, spread the clotted cream frosting evenly over the top.

  11. Serve and enjoy!
