How To Make Salt Beef with Beetroot & Horseradish Relish

Ingredients
- 2 lbs salt beef
- 4 beetroots, cooked and diced
- 1/4 cup horseradish, grated
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions

Place the salt beef in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 2 and a half hours.

While the beef is simmering, prepare the beetroot and horseradish relish. In a bowl, combine the diced beetroots, grated horseradish, lemon juice, honey, olive oil, salt, and pepper. Mix well and set aside.

Once the beef is cooked, remove it from the pot and let it cool slightly. Slice the beef into thick slices.

Serve the salt beef slices with a generous spoonful of the beetroot and horseradish relish on top.
