Ingredients

  • 4 large eggs
  • 1/2 lb green beans, trimmed
  • 2 cups cherry tomatoes, halved
  • 4 cups mixed salad greens
  • 1/4 cup black olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp capers
  • 1/2 cup canned tuna, drained
  • 2 tbsp fresh parsley, chopped
  • dressing:
  • 2 tbsp dijon mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add the eggs and cook for 8 minutes. Once cooked, transfer them to a bowl of ice water to cool. Peel and set aside.

  2. In the same saucepan, blanch the green beans in salted boiling water for 3 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

  3. In a large bowl, combine the salad greens, cherry tomatoes, black olives, red onion, and capers.

  4. In a small bowl, whisk together the dijon mustard and red wine vinegar. Slowly drizzle in the olive oil while whisking to emulsify the dressing. Season with salt and pepper.

  5. Add the green beans and tuna to the salad bowl and gently toss with the dressing.

  6. Divide the salad among four plates and top each with a peeled egg. Sprinkle with fresh parsley.

  7. Serve immediately.
