Ingredients

  • 2 medium beetroots, peeled and diced
  • 1 small butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup Greek yogurt
  • 1 tablespoon horseradish
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill, chopped
  • 2 cups mixed salad greens

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the diced beetroots and butternut squash with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25 minutes or until tender.

  3. In a small bowl, mix together the Greek yogurt, horseradish, lemon juice, and fresh dill to make the horseradish cream dressing.

  4. Place the roasted beetroots and squash on a serving platter. Drizzle the horseradish cream dressing over the top.

  5. Serve the salad on a bed of mixed salad greens.
