How To Make Beetroot & Squash Salad with Horseradish Cream

Ingredients
- 2 medium beetroots, peeled and diced
- 1 small butternut squash, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup Greek yogurt
- 1 tablespoon horseradish
- 2 tablespoons lemon juice
- 2 tablespoons fresh dill, chopped
- 2 cups mixed salad greens
Instructions

Preheat the oven to 400°F (200°C).

Toss the diced beetroots and butternut squash with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25 minutes or until tender.

In a small bowl, mix together the Greek yogurt, horseradish, lemon juice, and fresh dill to make the horseradish cream dressing.

Place the roasted beetroots and squash on a serving platter. Drizzle the horseradish cream dressing over the top.

Serve the salad on a bed of mixed salad greens.
