Brown-Braised Onions Recipe

Cooked in butter and chicken stock, these small onions pair well with a variety of meals.

How To Make Brown-Braised Onions

Onions cooked in butter and chicken stock

  • 20 small white onions
  • 2 tbsp butter (or 30 ml )
  • 1 cup chicken stock (or 250 ml)
  • 1 tsp sugar (or 5 ml)
  • salt
  • freshly ground pepper (to taste)
  1. To peel the onions, drop them in boiling water for 1 minute.
  2. Drain and rinse under running water.
  3. Trim off the root end and the skin should slip off.
  4. Sauté the onion is the butter until lightly browned.
  5. Add enough chicken stock to come halfway up the onions.
  6. Add the sugar, salt, and pepper and simmer covered until the onions are cooked through, about 20 minutes.
  7. Drain and serve.
  8. Serves 4 to 6.
