Chicken quesadillas with paprika, cheese and cilantro

Weeknights are all about the quick and easy dinners and this copycat Qdoba chicken quesadillas is hands down the best you’ll make for friends and family.

Similar to a taco, a quesadilla is pretty much two slices of tortilla filled with cheese,  salsa, meat and beans; and then cooked on the griddle until golden brown and cheese has melted to a gooey perfection.

Go ahead and enjoy this copycat Qdoba Chicken Quesadilla in the comforts of your home. To make the chicken more flavorful, you might want to consider marinating it overnight.

How To Make Qdoba Chicken Quesadillas

  • 4 large flour tortillas
  • 1 shredded Monterey Jack Cheese
  • 1 can chipotle peppers in adobo
  • 3 tbsp. Fajita seasoning
  • ½ Vinegar
  • Olive oil
  • Water
  • Chicken breasts (pounded thin)
  • 1 medium tomato (chopped)
  • 2 tbsp. shredded cilantro
  1. Blend the adobo peppers, fajita seasoning, vinegar and water in a food processor until smooth.
  2. Pour in a large plastic bag, with the chicken breasts, and let marinade for at least 1 hour.
  3. Set the grill between low to medium low heat and slowly cook the chicken for 15 minutes or until it’s fully cooked.
  4. Move the chicken off of the grill and let it sit for 5 to 10 minutes.
  5. Cut the chicken into 1/2-inch pieces.
  6. Using a griddle or large skillet, heat the large flour tortillas, building the quesadilla with cheese, tomato and chicken on the griddle, then sprinkle with cheese and cover with the top tortilla.
  7. Let the tortilla cook for 1 minute, then flip to cook other side.
  8. Top with cilantro and pair with salsa.
