Mix together cornflake crumbs and parmesan cheese with a dash of garlic powder and cover all over your zucchini to get a great appetizer to serve before your big meal. These zucchini chips go very well with marinara or peppercorn ranch for dipping sauce.

Ingredients

  • cups cornflake crumbs
  • 3 tbsp parmesan cheese, grated
  • ½ tsp salt
  • garlic powder, (1 dash)
  • 4 zucchini, small, cut into ½-inch strips, unpeeled
  • 3 eggs, beaten
  • 5 cups vegetable oil

To serve:

  • ½ cup cream cheese sauce, (or any sauce of choice) 

Instructions

  1. Preheat oil in a deep skillet to 375 degrees F.
  2. Combine the crumbs, cheese, and seasonings in a plastic bag.
  3. Coat the zucchini strips in the egg and dip in the crumbs to coat.
  4. Place into the hot oil and fry until golden brown.
  5. Drain onto a plate lined with a paper towel, and serve with your sauce of choice!
