How To Make Vegetarian Grilled Zucchini Rolls Recipe

Grilled zucchini rolls stuffed with ricotta cheese, spinach, and sun-dried tomatoes, a perfect appetizer or side dish.

Ingredients

  • 2 large zucchinis, sliced lengthwise
  • 1 cup of ricotta cheese
  • 1/2 cup of chopped spinach
  • 1/4 cup of chopped sun-dried tomatoes
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan to high heat.

  2. Brush zucchini slices with olive oil and sprinkle with salt and pepper.

  3. Grill zucchini slices for 1-2 minutes on each side until grill marks form.

  4. In a small bowl, mix together ricotta cheese, spinach, and sun-dried tomatoes.

  5. Spread a spoonful of the cheese mixture onto each zucchini slice and roll up tightly.

  6. Secure each roll with a toothpick if needed.

  7. Grill the zucchini rolls for another 2-3 minutes on each side until cheese is melted and zucchini is tender.

  8. Remove toothpicks before serving.
