Ingredients

  • 4 cups diced green tomatoes
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add onions and garlic, and cook until soft.

  3. Add diced green tomatoes and vegetable broth.

  4. Bring to a boil, reduce heat and simmer for 20 minutes.

  5. Add salt and pepper to taste.

  6. Add heavy cream and blend until smooth using a stick blender or regular blender.

  7. Serve hot and garnish with fresh herbs if desired.
