Pickled Jalapenos and Carrots Recipe

How To Make Pickled Jalapenos and Carrots

A jar of these pickled jalapenos with crunchy carrots makes for a great side dish! Serve them with your meals or top them over your favorite burgers.

  • cupsdistilled white vinegar
  • ¼cupwhite sugar
  • 10jalapeno peppersthinly sliced
  • 2cupscarrotssliced, ¼-inch thick slices
  • ½red onioncut into ¼-inch-thick rings


  1. Bring the vinegar and sugar to a boil in a saucepan over high heat.

  2. Cook and stir until the sugar has dissolved, then stir in the jalapeno peppers, carrots, and onion.

  3. Remove from the heat.

  4. Let stand for 1 hour.

  5. Cool to room temperature, serve, and enjoy!
