Hot Corn Dip Recipe

How To Make Hot Corn Dip

This corn dip combines sweet corn with peppers, spices, sour cream, and lots of creamy cheeses. Pair this up with your favorite chips, veggies, or crackers.

Serves:

Ingredients

  • 1tbspolive oil
  • ½onion,diced
  • 1red pepper,diced
  • 1jalapeno,seeds removed and diced
  • 30ozcorn,(2 cans)
  • 8ozcream cheese,softened
  • ½cupsour cream
  • 2cupscolby jack cheese,shredded and divided
  • ½tspchili powder
  • ½tspgarlic powder
  • ¼tsppaprika
  • salt and pepper
  • green onion,sliced for garnish

Instructions

  1. Preheat oven to 400 degrees F. In a medium sized saucepan add the olive oil, onion, red pepper, and jalapeño. Cook over medium high heat until tender.

  2. In a medium sized bowl add pepper mixture, corn, cream cheese, sour cream, 1 cup cheese, chili powder, garlic, paprika, salt and pepper. Stir until combined.

  3. Spread in a 2 quart casserole dish or small skillet. Sprinkle remaining 1 cup cheese.

  4. Bake for 15 to 20 minutes or until hot and bubbly golden brown. Garnish with green onions if desired.
