How To Make Canning Pizza or Spaghetti Sauce from Fresh Tomatoes

  • 8 lbs fresh tomatoes, peeled and chopped
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup sugar (optional)


  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cook until soft.

  2. Add the chopped tomatoes, dried basil, dried oregano, salt, and black pepper to the pot. Stir well.

  3. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 1 hour, stirring occasionally.

  4. If desired, add sugar to balance the acidity of the tomatoes. Stir well and continue to simmer for another 30 minutes.

  5. Use an immersion blender to blend the sauce to your desired consistency. Alternatively, let the sauce cool slightly and blend in batches in a regular blender.

  6. Ladle the sauce into sterilized jars, leaving 1/2 inch of headspace. Wipe the rims of the jars clean and seal with lids.

  7. Process the jars in a boiling water bath for 35 minutes.

  8. Remove the jars from the bath and let them cool completely before checking the seals and storing in a cool, dark place.
