How To Make Terry’s Texas Pinto Beans

Ingredients
- 2 cups dried pinto beans
- 6 cups water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 tsp cumin
- 1 tbsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped fresh cilantro, for garnish
Instructions

Rinse the pinto beans and remove any debris. Soak the beans overnight in water.

Drain and rinse the soaked beans. In a large pot, combine the beans, water, diced onion, minced garlic, jalapeno pepper, cumin, chili powder, salt, and black pepper.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beans are tender.

Remove from heat and let the beans cool slightly. Use a fork or potato masher to mash some of the beans to thicken the sauce.

Serve the Texas pinto beans hot, topped with chopped fresh cilantro.
