How To Make Mini Jacket Potatoes

Ingredients
- 12 small new potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Sour cream and chives for serving (optional)
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and dry them with a paper towel.

Place the potatoes in a large bowl and pour in the olive oil. Toss to evenly coat.

In a separate small bowl, mix together the salt, black pepper, garlic powder, and paprika.

Sprinkle the seasoning mixture over the potatoes and toss again until the potatoes are coated.

Arrange the potatoes on a baking sheet lined with parchment paper.
