  • 1 pork tenderloin (about 1 lb)
  • Salt and pepper
  • 2 tbsp Dijon mustard
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1/4 cup panko breadcrumbs
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F.

  2. Season pork tenderloin with salt and pepper.

  3. In a small bowl, mix mustard, rosemary, and thyme together.

  4. Spread the mixture over the pork tenderloin, ensuring it is completely coated.

  5. Sprinkle the panko breadcrumbs over the mustard mixture, pressing lightly to adhere.

  6. In an oven-safe skillet, heat olive oil over medium-high heat.

  7. Add the pork tenderloin to the skillet and sear on all sides until golden brown, about 2-3 minutes per side.

  8. Transfer skillet to the preheated oven and cook for 15-20 minutes, or until the internal temperature of the pork reaches 145°F.

  9. Let pork rest for 5 minutes before slicing and serving.
