Ingredients

  • 1 pork tenderloin (about 1 lb)
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/4 cup breadcrumbs
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a mixing bowl, combine pecans, cranberries, breadcrumbs, garlic, salt, and pepper.

  3. Cut a slit down the length of the pork tenderloin, making sure not to cut through the other side. Stuff the mixture into the slit.

  4. Heat olive oil in a skillet over medium heat. Add the stuffed pork tenderloin and sear until browned on all sides, about 5 minutes.

  5. Transfer the tenderloin to an oven-safe dish and bake for 25-30 minutes, until fully cooked (the internal temperature should be 145°F).

  6. Let the pork rest for 5 minutes before slicing and serving.
