Ingredients

  • 2 lbs pork loin roast
  • 2 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, combine the Dijon mustard, minced garlic, dried rosemary, dried thyme, dried sage, salt, and black pepper.

  3. Rub the mustard mixture all over the pork loin roast, ensuring it is well coated.

  4. Heat the olive oil in an oven-safe skillet or roasting pan over medium-high heat.

  5. Sear the pork loin roast on all sides until it is browned and crispy.

  6. Transfer the skillet or roasting pan to the preheated oven and roast for 1 hour, or until the internal temperature reaches 145°F (63°C).

  7. Remove the pork loin roast from the oven and let it rest for 10 minutes before slicing.

  8. Serve the herb-crusted roast pork with your favorite sides.
