Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp fresh rosemary, chopped
  • 2 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.

  2. Rinse pork tenderloin and pat dry with paper towels.

  3. In a small bowl, combine rosemary, garlic, lemon zest, olive oil, salt, and pepper to create a rub.

  4. Rub the mixture over the pork tenderloin until coated.

  5. Place the pork tenderloin in a baking dish and pour lemon juice over it.

  6. Bake in the oven for 25-30 minutes or until the internal temperature reaches 145°F.

  7. Let it rest for 5 minutes before slicing and serving.
