Ingredients

  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 cup sliced mushrooms
  • 1 zucchini, sliced thin
  • 1 cup snow peas
  • 1/2 cup vegetable broth
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp brown sugar
  • 1/2 tsp ginger powder
  • salt and pepper

Instructions

  1. Heat oil in a wok or large skillet over medium-high heat.

  2. Add garlic and stir-fry for a few seconds.

  3. Add peppers, mushrooms, zucchini, and snow peas; stir-fry for 5 minutes.

  4. Mix together broth, soy sauce, cornstarch, brown sugar, ginger powder, salt, and pepper in a bowl.

  5. Pour the mixture into the wok/skillet and stir-fry for 2 minutes.

  6. Serve hot with rice.
