How To Make Mussels in Miso Broth Recipe

Plump mussels in a savory miso broth bursting with umami flavor.

Serves:

Ingredients

  • 3 lbs live mussels, scrubbed and debearded
  • 4 cups of water
  • 4 tbsp of miso paste
  • 1 tbsp of vegetable oil
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, minced
  • 1 red chili pepper, sliced
  • 2 stalks of green onions, sliced

Instructions

  1. In a large pot, heat oil over medium heat. Add garlic, ginger and chili pepper and sauté for 1 minute.

  2. Add water and miso paste and stir until the miso is dissolved.

  3. Increase heat to high and bring broth to a boil. Add mussels and cover the pot.

  4. Cook until the mussels open, stirring occasionally, for about 5-7 minutes.

  5. Discard any mussels that do not open.

  6. Serve hot in bowls, garnished with green onions.
