Ingredients
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 cup sliced mushrooms
- 1 zucchini, sliced thin
- 1 cup snow peas
- 1/2 cup vegetable broth
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp brown sugar
- 1/2 tsp ginger powder
- salt and pepper
Instructions

Heat oil in a wok or large skillet over medium-high heat.

Add garlic and stir-fry for a few seconds.

Add peppers, mushrooms, zucchini, and snow peas; stir-fry for 5 minutes.

Mix together broth, soy sauce, cornstarch, brown sugar, ginger powder, salt, and pepper in a bowl.

Pour the mixture into the wok/skillet and stir-fry for 2 minutes.

Serve hot with rice.
