Ingredients

  • 8 fish fingers
  • 4 tortilla wraps
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • Salt and pepper, to taste
  • Lettuce leaves, for serving

Instructions

  1. Preheat the oven to 200°C (400°F) and bake the fish fingers according to the package instructions.

  2. In the meantime, cook the frozen peas according to the package instructions. Drain and set aside.

  3. Heat olive oil in a pan over medium heat, add minced garlic, and cook for 1-2 minutes until fragrant.

  4. Add the cooked peas to the pan and mash them with a fork or potato masher until smooth.

  5. Stir in the lemon juice and season with salt and pepper to taste.

  6. Warm the tortilla wraps in a dry pan or microwave for a few seconds until pliable.

  7. Spread a spoonful of pea purée onto each wrap, then place 2 fish fingers on top.

  8. Add lettuce leaves and roll up tightly, securing with a toothpick if necessary.

  9. Serve the fish finger wraps warm, and enjoy!
