These breakfast burritos are one of our favorite family brunch recipes! They have great taste and color! You can use egg substitutes if desired.

These quick and easy breakfast burrito is the perfect way to have an easy-to-eat meal in a neat little package. Packed with Italian sausages, eggs and salsa you can't stop at just one.

Ingredients

  • 12 tortillas, (8-inch)

For Burrito Filling:

  • 1 lb Italian Sausage, removed from casing
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tbsp paprika
  • ¼ cup skim milk
  • 6 eggs
  • 2 tbsp unsalted butter

For Salsa:

  • 10 oz tomatoes, fresh, chopped
  • ¼ cup cilantro, chopped
  • ½ cup yellow onion, peeled and chopped
  • ½ cup lemon juice, fresh
  • salt and ground black pepper , to taste

To serve:

  • ¼ cup sour cream

Instructions

  1. In a large skillet over medium heat, sauté sausage with chili powder, cumin, and paprika until browned. Set aside.
  2. In a mixing bowl, whisk and combine milk and eggs together.
  3. In a large skillet, melt the butter over medium heat and saute eggs until scrambled. Add into your sausage mixture and toss to combine.
  4. Adjust seasoning with salt and pepper to taste.
  5. Combine all ingredients for the salsa then set aside.
  6. Place roughly 2 tablespoons of egg and sausage mixture per tortilla shells and roll like a burrito.
  7. Add salsa on top and serve with sour cream and extra salsa.
