Ingredients

  • 2 cups of all-purpose flour
  • 1/2 tsp of salt
  • 1/2 cup of cold water
  • 1/3 cup of vegetable oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 carrot, diced
  • 1 potato, peeled and diced
  • 1 cup of frozen peas
  • 1 tsp of dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, mix the flour and salt together. Add the cold water and vegetable oil, then mix until it forms a dough.

  3. Divide the dough into 4 equal portions and roll each one out into a circle about 8 inches in diameter.

  4. In a frying pan, heat some oil and sauté the onion and garlic until they are translucent and fragrant.

  5. Add the carrot and potato to the pan and cook until they are slightly softened.

  6. Stir in the frozen peas, dried thyme, salt, and pepper, cooking for an additional 2 minutes.

  7. Place a generous spoonful of the vegetable filling onto one half of each dough circle.

  8. Fold the other half of the dough over the filling and press the edges together to seal the pasties. You can crimp the edges with a fork for a decorative touch.

  9. Place the pasties on a baking sheet lined with parchment paper and brush the tops with some beaten egg for a golden-brown finish.

  10. Bake in the preheated oven for 25-30 minutes, or until the pasties are golden brown and crispy.

  11. Serve hot and enjoy!
