How To Make Lighter Cornish Pasties

Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 1 cup lean ground beef
- 1 small onion, finely chopped
- 1 small potato, peeled and diced
- 1 carrot, peeled and diced
- 1/2 cup frozen green peas
- 1/2 tsp dried thyme
- salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions

In a large mixing bowl, combine the flour and salt. Add the cold butter and use your hands or a pastry cutter to cut it into the flour until it resembles breadcrumbs.

Gradually add the ice water, mixing until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 400°F (200°C).

In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion, potato, carrot, frozen peas, dried thyme, salt, and pepper. Cook for another 5 minutes until the vegetables are softened.

On a lightly floured surface, roll out the chilled dough to about ¼ inch thickness. Cut out 4 circles, approximately 6 inches in diameter.

Divide the filling evenly among the circles, placing it on one side of each circle. Fold the other half of the dough over the filling and press the edges firmly to seal. Crimp the edges with a fork.

Place the pasties on a baking sheet lined with parchment paper. Brush the tops with beaten egg wash.

Bake for 30-35 minutes until the pasties are golden brown and crispy.
