Ingredients

  • 2 sweet potatoes, peeled and sliced into thin rounds
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup cold sparkling water
  • Vegetable oil, for frying
  • Salt, for seasoning

Instructions

  1. In a large bowl, whisk together flour, cornstarch, baking powder, and salt.

  2. Gradually add cold sparkling water while whisking until the batter becomes smooth.

  3. Heat vegetable oil in a deep pot or fryer to 375°F (190°C).

  4. Dip sweet potato slices into the batter, making sure they are evenly coated.

  5. Carefully place coated slices into the hot oil and fry until golden brown and crispy, about 3-4 minutes.

  6. Using a slotted spoon, transfer tempura to a paper towel-lined plate to drain excess oil.

  7. Season with salt while still hot.

  8. Serve immediately and enjoy!
