- 2 zucchinis, thinly sliced
- 2 yellow squash, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
- 1 tablespoon lemon juice (optional)
Instructions

Preheat the grill or smoker to medium heat.

In a large bowl, combine the zucchini, yellow squash, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until well coated.

Place the zucchini and squash slices on the grill or smoker grates, ensuring they are in a single layer.

Grill or smoke for about 15-20 minutes, flipping halfway through, until the vegetables are tender and lightly browned.
