Ingredients

  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 small head of cabbage, thinly sliced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 can of diced tomatoes, drained
  • 4 cups of vegetable broth
  • 1 tbsp of olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté until fragrant.

  3. Add carrots and celery, cook for 5 minutes.

  4. Stir in cabbage, zucchini, and yellow squash, cook for 10 minutes.

  5. Pour in vegetable broth and diced tomatoes.

  6. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

  7. Season with salt and pepper.
