Ingredients

  • 1 cup dried green lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.

  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables start to soften, about 5 minutes.

  3. Add the garlic, oregano, thyme, and bay leaf to the pot, and sauté for another minute.

  4. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 40 minutes or until the lentils are tender.

  5. Season with salt and pepper to taste.

  6. Ladle the soup into bowls and garnish with fresh parsley.

  7. Serve hot and enjoy!
