  • 2 sweet potatoes, peeled and cubed
  • 1 cup red lentils
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish

Instructions

  1. Heat some olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and golden brown.

  2. Add the cubed sweet potatoes, red lentils, cumin, paprika, salt, and pepper to the pot. Stir well to coat the sweet potatoes and lentils with the spices.

  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20-25 minutes, or until the sweet potatoes and lentils are fully cooked and tender.

  4. Using an immersion blender or regular blender, carefully blend the soup until smooth and creamy. If using a regular blender, blend in batches and be cautious of the hot liquid.

  5. Once blended, return the soup to the pot and adjust the seasoning if needed. If the consistency is too thick, add more vegetable broth or water to achieve the desired thickness.

  6. Serve the sweet potato and lentil soup hot, garnished with fresh cilantro leaves.
