  • 2 cups pearl onions
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Bring a pot of water to a boil. Add the pearl onions and cook for 2 minutes. Drain and rinse with cold water. Trim the ends and peel off the outer layers of skin.

  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, until well combined.

  3. Gradually whisk in the milk, salt, pepper, and nutmeg. Cook, stirring constantly, until the sauce thickens and comes to a simmer.

  4. Add the pearl onions to the sauce and cook for 10 minutes, until the onions are tender and the flavors are well combined.

  5. Serve hot as a side dish.
