  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 2 ripe bananas, mashed
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, combine the flour, oats, flaxseed, chia seeds, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, whisk together the honey, coconut oil, mashed bananas, almond milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Gently fold in the chopped walnuts and dried cranberries.

  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
